Camp Fire Pakoras – The Perfect Outdoor Cooking Recipe


There’s something special about cooking outdoors. Whether you're gathered around a campfire, enjoying a family barbecue, or running a countryside cooking session, these Camp Fire Pakoras are a simple, delicious way to turn fresh vegetables into a crispy, flavour-packed snack.


Pakoras are traditional spiced vegetable fritters made with gram flour (also known as chickpea flour), herbs and spices before being fried until golden and crisp. Popular across the Indian subcontinent, they are a fantastic way to use seasonal vegetables and foraged greens.

These pakoras are naturally gluten-free, dairy-free and vegan, making them a crowd-pleasing option for outdoor gatherings.



Camp Fire Pakoras

Serves: 8 people

Ingredients

  • 2 cups gram flour
  • 1 tsp fenugreek
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • ½ tsp salt
  • Vegetable oil for frying
  • 3 cups shredded or grated vegetables, such as:
  • Carrots
  • Onions
  • Cabbage
  • Foraged greens



Method


1. Make the batter

Place the gram flour into a large mixing bowl. Add the fenugreek, cumin, ground coriander, turmeric and salt. Mix well. Gradually pour in approximately ¾ cup of water, stirring continuously until you have a thick, sticky batter.


2. Add the vegetables

Add the prepared vegetables and greens to the bowl. Using clean hands or a spoon, mix thoroughly until all the vegetables are evenly coated in the batter.


3. Heat the oil

Heat vegetable oil in a deep pan over the campfire or on a camping stove until hot.

Safety first: Always take extra care when cooking over an open fire and handling hot oil.


4. Fry the pakoras

Carefully drop spoonfuls of the mixture into the hot oil.

Cook for 3–5 minutes, turning occasionally, until the pakoras are crisp, golden brown and cooked through.


5. Drain and serve

Remove the pakoras using a slotted spoon and place them on kitchen paper to drain any excess oil.

Allow them to cool slightly before serving.

  • Use whatever vegetables you have available – pakoras are a brilliant way to reduce food waste.
  • Add freshly foraged edible greens for a seasonal countryside twist.
  • Serve with a cooling yoghurt mint dip or your favourite chutney.
  • These are best enjoyed fresh from the pan while still warm and crispy.
